Impressive Brunch Ideas For Guests

Brunch means a combination of breakfast, lunch, and mimosas. I love hosting and attending a brunch, which doesn't have to be saved just for the holidays. If you're tired of serving basic deviled eggs or bagels and cream cheese look no further. These elevated brunch recipes are easy and can be made the night before giving you more time to spend with your family and friends. 

1. Tater Tot Breakfast Casserole

This breakfast casserole is fun for all ages and uses tater tots in place of your typical hash browns. The chopped jalapeno gives it the right amount of kick. 

Ingredients:

1 32oz. bag frozen tater tots

1 lb. hot or mild breakfast sausage

1 yellow onion, chopped

12 large eggs

1/2 cup whole milk

1 red bell pepper, chopped

1 tbsp. hot sauce (your choice)

Salt and pepper to taste

2 cups Colby-Jack cheese blend divided

1 jalapeno sliced


How To Make It:

1. Preheat oven to 350 degrees. In a large skillet, cook the sausage over medium-high heat. Brown with a wooden spoon for 5 minutes until browned. Add the bell pepper and onion and cook for 10 minutes until tender. 

2. In a large bowl, whisk the hot sauce, eggs, milk, salt, and black pepper. Layer the tots evenly in a lightly greased 3-quart baking dish. Sprinkle 1 cup of cheese and the sausage mixture on top. Pour the egg mixture evenly over the tater tots and sprinkle with the remaining cheese. 

3. Bake for 50-55 minutes and let stand for 10 minutes. Top with jalapeno and chives (optional). 


2. Berry Muesli

How stunning and salivating does this look? This takes a yogurt parfait up 10 or so notches. Serve this dish during or after your brunch. Either way, your guests will be screaming for more!

Ingredients:

4 black plums, chopped

1 can of lychees in syrup, drained and saving 1/4 cup syrup. (You can find this in the canned fruit section of your local grocery store or Asian grocery store).

1 vanilla bean, halved with seeds scraped

1 1/4 cups Muesli

1/4 cup brow sugar

2/3 cup raspberries

1/4 tsp. ground cinnamon

4 tbsp. butter

Vanilla ice cream to serve


How To Make It:

1. Slice the lychees in half and place in a skillet with 1/4 cup syrup, vanilla bean seeds, plums, and 1 tbsp. brown sugar. Bring to a boil and stir. Cover and simmer for 3 minutes over medium-low heat. Remove from heat and stir in raspberries. 

2. Pour 1 1/4 cups of the muesli and cinnamon in a bowl.

3. Melt the butter in a saucepan for 4 minutes over medium heat until foaming. Remove from heat and stir in 1/4 cup of brown sugar. Add the muesli and stir to combine. Top with the fruit mixture and top with a scoop of vanilla ice cream.  


3. Eggs In A Hole With Gruyere

This childhood classic is elevated with the salty Gruyere cheese. The recipe calls for rainbow chard, but you can use spinach, kale, or any other green you like that goes well with eggs. 

Ingredients:

6 slices sourdough bread

3 tbsp. butter

4 oz. Gruyere cheese

1 bunch rainbow chard, chopped

6 large eggs


How To Make It:

1. Preheat oven to 425 degrees. Grease or coat a large baking sheet with cooking spray. 

2. Using a round cookie cutter, cut holes out of the middle of the sourdough slices. Arrange the bread with the cutouts on the baking sheet and bake for 5 minutes, turning over halfway through. 

3. Melt butter in a skillet on medium heat. Add the chard or green of your choice and a pinch or two of salt. Cook for 8-10 minutes until tender. Spread the chard on the bread slices around the holes. Add one egg to each hole and top with salt and gruyere cheese. 

4. Bake for 8-10 minutes or until the whites are set and serve immediately.

4.  Spinach And Ham Egg Bakes

These spinach and ham egg bakes are a convenient on-the-go bite for your guests. The great thing about them is you can use a variety of ingredients like bacon instead of ham, whatever your favorite cheese, or dill instead of parsley.

Ingredients:

4 large eggs

1 14oz. package of refrigerated rolled piecrust

1 10oz. package frozen chopped spinach, thawed and squeezed dry

3/4 cup half and half

1/3 cup smoked ham, finely chopped

2 scallions, chopped

2 tsp. Dijon mustard

1 tbsp. chopped fresh dill

Salt and pepper to taste


How To Make It:

1. Preheat the oven to 375 degrees on the bottom rack. Roll out the pie crust and cut it into 12 4-inch rounds. Spray a muffin tin with cooking spray and fit the rounds in, pressing slightly over the sides of each cup. Chill in the refrigerator for 10 minutes. 

2. Whisk together in a bowl the eggs, spinach, ham, half-and-half, scallions, mustard, dill, salt, and pepper. Spoon into the pie crusts evenly. 

3. Bake until the crusts puff up for 20-25 minutes.

5. Green Eggs And Ham Sandwiches

Super easy and delicious recipe that's not your average croissant sandwich. 


Ingredients:

6 large hard-boiled eggs

1/4 cup pesto 

3 tbsp. mayonnaise

4 croissants

8 slices thin ham

1 cup arugula

Black pepper


How To Make It: 


1. Peel the hard-boiled eggs, chop, and place in a medium-sized bowl. Add the pesto, mayonnaise, and pepper.

2. Slice the croissants in half. Divide the ham, arugula, and egg salad among the croissants. Serve, or wrap tightly in wax paper and refrigerate for up to 4 hours.
