If you're anything like me, the first thing you want on Christmas morning is a giant cup of coffee and my sweats. Then I'm ready to get going with watching the family open gifts. The last thing I want is to be stuck in the kitchen cooking a bunch of meals for brunch while everyone is having all the fun. These top 5 hearty crockpot meals are not only delicious but will give you more time to spend with the fam. Or the ability to sleep in longer (yeah right). 

1. Biscuit Breakfast Casserole

This breakfast casserole is an entire meal all to itself. Instead of the typical biscuits and gravy for breakfast or brunch, check out this cheesy biscuit recipe your guests will love from CrockPotLadies.com

Ingredients (serves 8): 

Cooking spray or butter to grease the inside of the crockpot. 

1 can Pillsbury (or any brand) refrigerated biscuits (not the flaky layers kind).

4 large eggs

1/4 cup milk

1/2 cup shredded cheese

5 oz. bacon cooked and chopped

Directions:

1. Butter or spray the crockpot or slow cooker. 

2. Lay the biscuits in a single layer along the bottom of the crockpot.

3. In a medium-sized bowl, mix together the milk, eggs, cheese, and bacon.

4. Pour the mixture covering the biscuits. 

5. Cover the crockpot and cook on high for 1 1/2 to 2 hours. You'll notice it's ready when the sides of the biscuits are lightly browed and the egg mixture is fully cooked. 

6. Garnish with chopped fresh parsley. 


2.  Slow-Cooker Blueberry French Toast





Not only will this look like a masterpiece, but it will make your house smell divine on Christmas morning. What an easy and quick way to make a meal so decadent and delicious. This recipe from Queenbee Today makes 12 servings so it's a great idea if you have a big family or are having guests for brunch. This recipe can also be prepped and ready to go the night before. 

Ingredients:

8 eggs

1/3 cup sour cream 

1/2 cup plain yogurt

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 cup 2% milk

1/3 cup maple syrup

1 loaf French bread cubed 

12 oz. cream cheese cubed

1 1/2 cup fresh or frozen blueberries


How To Make It 

1. In a large mixing bowl, whisk the yogurt, sour cream, eggs, cinnamon, and vanilla together. Slowly whisk in the maple syrup and milk until blended.

2. Place half of the bread in a crockpot and layer with the cream cheese and egg mixture, and half of the blueberries. Layer more bread on top and repeat. Cover and refrigerate overnight if you're making ahead. 

3. Remove from the fridge 30 minutes prior to cooking. Set the crockpot to low, and cook for 3-4 hours. It's ready when you insert a knife into it and it comes out clean. 


3. Slow Cooker Breakfast Casserole With Hashbrowns

What's a holiday brunch without a breakfast casserole? This is another excellent recipe that's prepared the night before so it's ready to go when you are. Casseroles are very versatile and customizable making them an ideal choice to add to your menu. You can substitute ham for sausage, bacon, pork, etc. 

Ingredients:

1 lb frozen bag of hashbrown potatoes shredded or diced

1 lb sausage

12 large eggs

1 cup onion

1 1/2 cups bell pepper

1 1/2 cups shredded cheddar cheese

3/4 cup milk

1/2 teaspoon ground mustard

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes

salt & pepper to taste

Optional:

diced tomatoes

sour cream

chopped green onions

extra shredded cheese

fresh chopped parsley

How To Make It 

1. Spread out the frozen hash browns at the bottom of your crockpot and place the peppers and chopped onion on top.

2. Brown the sausage and layer on top of the peppers and onions and top with shredded cheese.

3. Whisk the eggs and remaining ingredients (except toppings) in a medium bowl. 

4. Pour the egg mixture over the ingredients in the slow cooker and cook on low for 8-9 hours. 


4. Slow Cooker Caramel Apple Cider

Yes, you can make drinks in a crockpot and this one is amazing! It only takes three delicious ingredients to make this spiked cocktail (or virgin) and your house will smell like Christmas all day long. 

Ingredients: 

Apple cider

Caramel ice cream topping

Captain Morgan spiced rum


How To Make It

1. Pour apple cider to slow cooker.

2. Stir in caramel ice cream topping.

3. Stir in Captain Morgan spiced rum and set to low for 3 hours. 

4. Ladle the cocktail into glass mugs and top with caramel ice cream and whip cream (optional). 


5. Slow Cooker Creamy Scrambled Eggs

Eggs are a must for me when it comes to any type of brunch and if you're serving a crowd, scrambled is the way to go. This is another time-saving slower cooker recipe you can make ahead.

Even though this is under my top 5 crockpot brunch ideas, it's not made in the crockpot whomp whomp. You pre-cook the eggs in a pan and keep them warm in the crockpot which also makes for easy serving for your guests. I found this recipe on The Food Charlatan found HERE and was skeptical about the cream cheese. After making it, I was shocked at how creamy the eggs were. Trust me, these creamy eggs are still well worth it to make this brunch list. 

Ingredients: 

24 large eggs

1 cup heavy cream or whole milk

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. mustard powder

1/4 tsp. cayenne pepper

1 stick of butter

1 8oz package of cream cheese cut into chunks (secret ingredient for the creaminess)

salt & pepper to taste

chives for garnish

shredded cheddar cheese for garnish


How To Make It (serves 12-15)

1. Blend  2 dozen eggs, milk, and all seasonings in a blender or whisk them if you wish.

2. Melt the butter in a large skillet on medium heat. Let it melt, pour in the egg mixture, and set the heat to medium-low. The key is to cook the eggs low and slow.

3. Using a spatula, occasionally scrape the bottom of the pan and cook for 10-15 minutes.

4. Add in the cream cheese chunks and fold them into the eggs. 

5. Make sure the eggs are cooked but still wet. Then add to the crockpot and set to "keep warm" for 4-5 hours. 

6. Stir the egg every hour and serve no later than the 5-hour mark. Top with green onions and cheddar.
